homecoming week

september 25th was the homecoming week for UNL and it is the 300th one? is it? lolzz i'm not sure... but anyway we trashed Louisiana Lafayette in football 55-0!!!

GO HUSKERS!!! wheee.. *kinda into football lately*

it is a competition for them and the winner will be announced half way through the homecoming game

very nice view of UNL...you'll see this from in any UNL brochure... that building there is for honors students to stay....the fountain only works from late spring to early fall...

and it rained heavily! BOOOOOOOOOOOOO

since i finally had more time away from books! we decided to make a trip to the malls just for window shopping

so my smart bf went online to check for the bus schedule...i was told by him that the bus will be at 1pm...

happily we went over at 12.30pm and we actually found out that the bus 45 Araphore

will be coming in 40 mins!!! w.t.f

reason is my bf checked the WEEKDAY schedule for a weekend bus!!! >.<

so we ended up with 24oz of juice smoothie.... blahhhhh

so here we are at south pointe... :)

and it was really just window shopping cz it wasnt on big sales...so yea didnt get anything much

oh ya there is one BEST OFFER in town and i didnt get anything that is the 7 PINK panties for $25 which is the super best deal we can actually get from victoria secret and i didnt get any for my sister...she almost killed me when i told her that...

just as well msia and US is like 10000+ miles away..... *phew*

since i didnt have internet over the weekend i decided to bake muffins! :)

went to walmart after lunch and get some groceries and ingredients

it was supposed to be raspberry and white chocolate muffins, i'm not sure whether i will finish the remaining raspberries, so i decided to change to strawberries

so yea my strawberry white chocolate muffins

12 in a tray

it looked kinda short because i didnt buy self raising flour and i forgot how much flour with baking powder to make up to a cup of self raising flour

and remember? i dont have internet to check which makes life so miserable...so i end up with short muffins...blahhhhhh

the strawberry looked gross after baking cz it melted....lol

but my bf loves it...he ate half a tray of my muffins...

the recipe i found was from jess's friend's blog

Ingredients
300g self-raising flour
150g golden caster sugar
1 egg1 tsp vanilla extract
225ml milk
50g butter, melted
100g fresh raspberries
75g chopped white chocolate

Method
1. Preheat the oven to 200C. Cut greaseproof paper into 15cmx15cm squares and push, creasing the paper to fit, into a muffin tin.
2. Sift the flour and baking powder into a large bowl and stir in the sugar. Crack the egg into a separate bowl and whisk in the vanilla extract, milk and melted butter.
3. Stir the liquid into the dry ingredients with the raspberries and chocolate. Take care not to over-mix, no more than 10-15 strokes.
4. Spoon the mixture into the cases and bake for 30 minutes or so until well risen and just firm.
